I’ve always found taking lunches that are healthy into work a challenge.Largely because I’m reasonably fussy, have a gluten intolerance and more often than not, can’t be bothered to plan ahead. Although I am gradually getting better at that last one. I thought I’d share with you five simple and easy healthy lunches that are great for taking into work and will certainly have you at the centre of the lunch time food envy.
A nice big, hearty salad to keep you feeling full. Not only does it look super delicious, it’s also extremely healthy too. If you fancy you can always heat it up to have as a hot salad. Minus the seeds and this is completely syn free on Slimming World.
If you’re going carb free this is a great take on the standard lunch wrap. What’s even better is that you can make and devour as many of these as you like without feeling guilty. Mix it up by changing the meat or lettuce leaves.
One thing I love more than anything is quinoa, it makes the perfect grain free alternative to bulk out a salad. This tabbouleh is packed full of vitamins with a mixture of sharp and sweet ingredients to tantalise those taste buds.
This Slimming World recipe is the perfect fakeaway, a clean version of your takeaway favourites. Who said you must have it just with salad? Chop up and add the chicken to some pasta or serve over a bed of brown rice.
These are perfect to make ahead of time for you to take to lunch all week. I tend to make a batch of these on Sunday and use them throughout the week for breakfast or lunch. For a breakfast spin add bacon and sausage, pop in the microwave to heat and voila. With lunch the possibilities are endless, you can even make them vegetarian and just fill them to the brim with veggies add a salad or beans and away you go.
